Known as the ‘black diamond of Provence,’ Périgord truffle or French winter black truffle is a renowned ingredient and most expensive edible mushroom in the world. With an intense earthy flavour and a strong aroma, truffle mushrooms can be sautéed briefly or slow-cooked. They can also be shaved fresh as a finishing element or infused into sauces to add depth.
As it is currently the season for these delicacies, Scarlett is celebrating with truffles in Hong Kong all December and January. Executive Chef Julien and his team have crafted 5 delectable dishes that highlight this precious ingredient in its new seasonal menu ‘Truffle Temptations’, a limited edition menu available only in December 2020 and January 2021.

Black Truffle & Scallop Carpaccio ($248)
Finely sliced Hokkaido scallop is drizzled with olive oil and a squeeze of lemon, then topped with French black truffle slices – the perfect way to fully appreciate the true flavours of these fresh ingredients.
Black Truffle Soup en Croûte ($278)
“En croûte,” a French term that refers to food baked in a pastry crust. Our Soup en Croûte version comes with chicken consommé, foie gras, mushroom and black truffle hidden under the baked golden house-made puff pastry.
Black Truffle Croque Monsieur ($188)
A classic French toasted sandwich that consists of Emmental cheese and Paris ham. Scarlett’s version includes French black truffle added in between the layers and comes served with house salad.
Black Truffle Raviolo ($208)
Slightly different from ravioli… raviolo refers to a single, large parcel of dumpling with a filling sealed between two layers of thin pasta dough. Scarlett’s Raviolo comes with French black truffle, egg and Bayonne ham, and served with poulette sauce.
Black Truffle Tagliatelle ($218)
Served with mushroom sauce, the house-made tagliatelle pasta is made from scratch every day using Doppio Zero, a high-grade Italian milled flour best used for pasta making. The dish is finishing off with shaved French black truffle to create those umami flavours to this beautiful simple dish.

Light golden yellow with herbal notes, white flowers and citrus aroma make it a wine that can be enjoyed on its own and also perfect to pair with aperitif and cheese.
Savigny les Beaune, Domaine Arnoux 2014 ($590)
100% Pinot Noir, this medium bodied Burgundy wine comes with red fruit aromas and oaky finish, great for pairing with poultry and beef dishes.
Champagne Rosé, Besserat de Bellefon ($790)
pink with salmon glints colour, it comes with sophisticated and intense summer berry fruits nose. Best paring with aperitif, white meats, duck and red fruit based dessert.
