Autumn Flavours in Singapore | French Food at Ginett Singapore

For the months of October and November, Ginett will be launching a new seasonal menu showcasing Autumn flavours in Singapore with classic French techniques.

Speaking with Chef de Cuisine Sylvain Royer on his inspiration for Ginett’s Autumn menu, he shares, “the Autumn season in France is synonymous with hearty dishes, colourful root vegetables, mushrooms and more. The possibilities are endless, and we wanted to create a menu that not only presents the variety and versatility of fall ingredients but also showcases what we do here at Ginett.”

Kabocha Squash Velouté ($18)

To start off, a Kabocha Squash Velouté. Savoury-sweet and creamy soups are a staple when the temperature starts to cool in Autumn. The Kabocha squash is prized for its velvety texture and sweet taste, making it the perfect ingredient for a classic savoury velouté. Served with sautéed scallops and topped with a truffle emulsion, pair this dish with a glass of medium-bodied and slightly dry Domaine Darnat, Bourgogne ‘La Jumalie’ Chardonnay ($12).

Halibut and Mushroom ($35)

The Halibut and Mushroom features three Autumnal ingredients – chanterelle mushrooms and baby squash lay the foundation for this dish. The halibut is then rounded off with toasty brown butter made with hazelnuts. This main will go well with a fruity glass of R de Roubine, Côtes de Provence Rosé ($8).

Coq au Vin ($30)

No Autumn line-up is complete without a hearty stew. Feast on a Coq Au Vin – a classic French stew of chicken braised with wine, lardons and mushrooms, served with Autumn root vegetables for the perfect pop of colour and bite. Balance off every mouthful with a sip of light Domaine Raimbault Sancerre Rouge Pinot Noir ($14).

Pumpkin Tart ($12)

Round up with the quintessential fall classic, the humble pumpkin showcased in a Pumpkin Tart. A light mousse is made from pumpkin purée and brown butter, nestled in a tart shell and topped with a spiced tuile. A serving of homemade salted caramel ice cream balances out the sweet mousse. Pair the pumpkin tart with a glass of fruit-forward Château de Landiras, Graves Sauvignon Blanc ($10).
