As the French saying goes, ‘Tout est bon dans le cochon”, which translates into ‘Everything is good in the pig’. Our Executive Chef Hubert Goussard couldn’t agree more, which is why he has chosen to prepare different cuts of pork to showcase that every part of this meat can be made delicious when cooked right.
This season, our Chef Hubert and the team would like to introduce tongue-to-belly pork recipes to Hong Kong with an exclusive menu showcasing 4 French-inspired pork dishes, starting from just $178.
TIME TO GET PORK ON YOUR FORK
PORK TONGUE ($178)
As this particular cut of meat requires some time to become tender, it is first cooked in a flavourful broth and smoked. Is it then served with Gribiche sauce, a traditional French cold sauce, which is quite similar to mayonnaise but made with hard boiled eggs, herbs and pickles. The perfect starter for your pork meal!
PORK BELLY ($208)
This succulent dish is slow-cooked for 12 hours then grilled to increase the flavour and juicy tenderness of this much-loved cut of pork. It is served with pan-fried French beans and bacon.
PORK CHOP ($278)
The delicious pork chop is oven-roasted and grilled, accompanied by mashed potatoes and Charcutière sauce. It is a traditional bistro sauce that matches perfectly with the grilled pork, as the acidity of white wine and pickles balances out the fattiness of the pork.
PORK SHOULDER ($498)
Roasted and glazed with BBQ sauce, this pork shoulder is a real juicy treat with tender meat that falls apart with just a touch of the fork. It comes with a choice of 1 side dish, making it an ideal main course for sharing!

Pic Saint Loup, “La Cérémonie” 2017 ($380)
A mixture of Grenache and Mourvèdre grapes, this medium-bodied red wine has a complex and oaky nose with silky tannins.
Châteauneuf du Pape, Château Mont Thabor 2015 ($690)
Medium-bodied with a lovely round texture, this Southern Rhône Châteauneuf du Pape makes for the perfect pairing with pork dishes. It will enhance the flavours of the meat, for a delectable experience.
Pommard, Domaine Darnat 2015 ($690)
Light and dedicate, this 100% Pinot Noir boasts fruity aromas of strawberry and cranberry, with slightly floral notes.
